1 bone-in côte de boeuf (about 3 pounds/1.35 kg)

1 teaspoon olive oil

Salt and pepper

2 tablespoons butter

1 head garlic, broken into unpeeled cloves

A handful of finely chopped fresh parsley

Turn your oven on full blast with the rack one-third of the way down from the top. Rub the beef with the olive oil and set it in a small roasting pan. Season with pepper.

When the oven is up to full heat, roast the meat for 10 minutes. Turn, throw the butter and garlic into the pan, and roast for a further 10 minutes for medium-rare.

Remove from the oven, throw over the parsley, and season with salt. Tent with foil and let rest for 15 to 20 minutes.

Carve the meat against the grain into thin slices at the table and serve with the pan juices spooned over.
